Aubergines are a fundamental ingredient in Taormina cuisine, and are also present in other specialties such as caponata, an appetizer made with aubergines, celery, tomatoes and olives.
Another typical dish of Taormina is swordfish alla ghiotta, prepared with tomato, olives, capers and garlic, while for lovers of spicier flavors there is pasta alla 'Nduja, a spicy salami-based sauce typical of Calabria.
Furthermore, the cuisine of Taormina is characterized by the presence of dishes based on fresh fish, such as Catalan-style red prawns, seasoned with tomato, onion, garlic and parsley.
